Wedding

So with the wedding quickly approaching I'm quickly finding I don't have time to do much at all, except for plan the wedding! It is so much to do and right now we are working to try to pick a wedding cake! Wedding cakes and food are hard with the g-f diet, and I'm trying hard to get the top layer of my cake gluten-free so that I can at least share in that first bite of cake moment with Patrick. This I feel confident will come together, but, as far as the actual design of the cake goes, I'm still up in the air!!

After the unfortunate circumstances regarding my former car, Sully, it was time to get a new car. This is it! Although I am still mourning the loss of Sully, this is a 2007 VW Jetta. i love my new car.

Caramel Icing


Tonight my sister, Meaghan, and I went to the Homemade Ice Cream and Pie Kitchen. Although it is soooo delicious, I try not to visit too much any more because it is highly addictive and probably the worst thing ever to eat. Anyways, Everytime I go there I have to get something caramel flavored. I don't know what it is but their caramel icing is SO good. Love the Dutch Apple with Caramel Pie without the crust. I found this gluten free recipe for caramel frosting online and cant wait to try it to see if it comes anywhere close to being as good as the Pie Kitchen.


3/4 stick butter

1 c dark brown sugar

1/4+ cup milk

1/2 box 10x sugar

1 tsp vanilla


Put butter in pan on top of stove and add brown sugar.When melted stir in milk.Bring to hard boil for 1-2 minutes, but no longer.Take off heat and pour over box of sugar. Beat well.Beat in vanilla. IF too thick add milk.


Yay! So excited cant wait.

A recipe to try:

From:"The Wheat Free Cook " at Williams Sonoma
by: jacqueline mallorca

Amaretto Cake:

1/2 cup almonds
1/4 cup brown rice flour
1/4 cup cornstarch
1 t baking powder
6 T unsalted butter, softened
3/4 cup sugar
3 large eggs
2 t Amaretto liqueur
confectioner's sugar

1. Preheat oven to 350 degrees, butter sides of 8 in cake pan and line with Parchment
2. combine almonds, rice flour cornstarch,baking powder
3.place butter and usgar in large bowl andbeat until fluffy. beat in amaretto and fold in almond flour mixture in 2 batches. place batter in cake pan
4. bake 25-30 mins until cake is slightly golden. let cool and dust with confectioner's sugar.

Spring Days





Totally love this boy. Even though he looks like a devil in this picture.It was taken about a year ago when we were both unemployed. Although we are both thriled to have found gainful employment, I miss spending sunny afternoons with him :) This weekends walk led me to a walk through Anchorage with Patrick... Oh, how I wish it would stay 65 degrees and beautiful! I just heard the weatherman say there is snow in the forcast. Bummer.

river bend winery

so tonight, hannah, patrick, and i went to river bend winery. hannah convinced us to do it, and failed to mention a couple important details. anyways, we get there and walk into this really nice looking restaurant on 10th st. then we take the elevator up to the 2nd floor, where we are immersed into a big decorated room with tons of people. we grab a seat and a bottle of wine, only to find out that the poetry reading we came for is "monologues on love sex and relationships." probably one of the funniest experiences i've ever had in louisville. there was food provided including the best chicken wings ever. they even played songs from that movie love and basktball. then the dj would turn off the music but all of the people would keep singing the words. we documented the entire trip in our wino notebook. at the end of the night patrick exclaimed that we would be going back. a little off topic, but wine is gluten-free and wine lovers would love this place. they make several types of their own wine, most are pretty good. pictures to come soon.

rainbow blossom vs whole foods


rainbow blossom recently moved into my neighborhood, and although i was not a former patron i decided to give it a try. i was pleasantly surprised with how many cool gluten-free items that rainbow blossom carries. they have lots of fresh baked goods, that i think taste better than the alternatives at whole foods. they are also slightly less expensive. i would definitely venture to say that rainbow blossom is definitely the better option for baked goods, although whole foods still has a lot of frozen food, and some other specialty foods that are great. . . http://www.rainbowblossom.com/ and http://www.wholefoods.com/ . I have to admit i am extremely intrigued by the supposed two story whole foods in pasendena.. see pic.

betty crocker

molly pointed out to me that i should mention the delicious new gluten-free line that betty crocker made! they have gluten-free chocalate chip cookies, brownies, and cake... Patrick and I have made the cookies a couple of times, after they were introduced to me by a co-worker Kelsey on my birthday. they taste just like regular chocolate chip cookies as long as you soften the butter rather than melting it. this is such an easy alternitive for celiacs and people on g-free diets. i can't help but think this would be an easy thing to make and substitute with for children with autism whose parents are keeping them on a gluten free diet. the other kids wont know the difference, and the child wouldnt be singled out! perfect! being gluten free is getting to be easier than ever...

the g-free diet


elisabeth hasselbeck, the view, wrote a book recently titled the g-free diet. elizabeth was diagnosed with celiac disease and decided to share with everyone her experiences as well as her findings in this awesome guide for the gluten-free girls (and guys) out there. i highly reccomend this book, as it is very innovative in ways to act normal in awkward social situations. It is also helpful in showing the reader ways to express to friends and family how important it is to be carefulin the kitchen. way to go elisabeth :)

valentine.

valentine's day is coming up, and although i'm limited in what sweets i can indulge in, i have found the perfect surprise! Hershey's is making delicious valentine-decorated carmel filled kisses. they are delicious and addictive and gluten-free! these are seriously all i need for valentines day. and a dozen long stemmed roses.
